Monasticism
This magical, 13th-century monastery on the hilltop of Collazzone invokes the sound of bells and the hum of Gregorian chants. Surrounded by ancient olive groves and three acres of park-like grounds, the imposing stone exterior has stood the test of time. But it's inside where the surprises start. Eat outside in the large poolside gazebo, which comes complete with a kitchenette, traditional wood-fired barbecue and lounge area, or serve up a formal feast in the enclosed inner courtyard. With its own chapel, it's even possible to book this fabulous place for special events.
